- 1 pound ground pork
- 1 tablespoon red wine vinegar
- 1 teaspoon kosher or sea salt
- 1 teaspoon freshly ground black pepper
- 1 heaping teaspoon dried parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons fresh basil, finely chopped
- 3/4 teaspoon sweet paprika
- 1/4 teaspoon cayenne pepper, or to taste
- pinch of red pepper flakes
- 1/4 teaspoon ground fennel seed
- 1/4 teaspoon fresh oregano, finely chopped
- 1/4 teaspoon fresh thyme, finely chopped
- Place all of the ingredients in a large bowl and combine well, using your hands, until all of the spices are evenly distributed throughout the meat. Cover and refrigerate for at least 1 hour before cooking to allow the flavors to permeate the pork.
