Ramp Salad with Lemon-Ramp Vinaigrette
  • 4 cups mixed baby greens
  • 2 cups ramp greens, julienned
  • 1/2 cup young ramps
  • 1 small tomato, cut into wedges
  • 1/2 cup red seedless grapes, halved
  • 2 small radishes, thinly sliced
  • 1 ounce pecans, roughly chopped
  • 1 tablespoon finely chopped young ramps
  • 1/2 tablespoon raw honey
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup to 1/3 cup extra virgin olive oil
  • salt and freshly ground black pepper, to taste
  1. Whisk all of the vinaigrette ingredients together in a small bowl; taste and season with salt and pepper as needed. Set aside.
  2. Toss the salad ingredients together in a large salad bowl; divide between three plates. Drizzle with the vinaigrette and serve.
