I’m drooling. And it all your fault. I got a large pie pumpkin in my CSA and made a ton of puree that I have been having a hay day with! I just did a week of pumpkin cooking from everything from pumpkin chili to spaghetti sauce. (served on spaghetti squash noodles of course.) Now I will make these! I used to LOVE making pumpkin pancakes. So excited! Thank you

What a great way to put the chains out of business! I still need to actually try the butternut squah pancakes, but after last night’s last meatloaf supper, I’m craving that again already!
Have you ever thought of recipes for the slow cooker???
